My QB updated automatically to a new version. How do I get the older much simpler version back

As a cloud-based service, QuickBooks Online updates automatically, which means it isn't possible to manually revert to a previous version.

If your account has transitioned from QuickBooks Self-Employed to QuickBooks Sole Trader Plus, this change was implemented to ensure your business continues to run smoothly and remains fully compliant with Making Tax Digital (MTD) regulations.
