Is there a way to change the Y axis scale to suit my business on the performance charts (Business Overview)?

QuickBooks Online comes stocked with tons of awesome reports that will help you assess your business health. The Business Snapshot report sounds like the one you're looking at, as it displays helpful graphs and charts to give you a visual of your finances. I'd be happy to explain how to run this report, and the limitations of it.

To run the Business Snapshot report, click the Reports tab on the left menu. Next, search for the report by title using the search bar.

Once you've pulled up the report you can adjust the date range for each graphic. At this time, the Y axis can't be customized to suit your specific needs, but I think that's an awesome idea. 

I'd suggest submitting your feedback about this for our product development team to consider. To do that, click the Gear icon > Feedback. We're always looking for new ways to improve the product.
