Should I use classes or projects to track our machines? We have about 50 machines that are allocated to different projects and each machine has their own cost centre.

Both do a similare job as in track expenses and icome allocated to them and you are able to run reports by class or project howver if you want to refer to the machines as projects, then use the projects.
