Can I see who has been sent an invoice reminder?

You can go to Sales menu to see which customers got a reminder for overdue invoices. QuickBooks Online adds 

If you want to see which customers got reminders, go to the Sales menu. QuickBooks adds Reminded to invoices in the Status column after it sends a reminder. 

On the other hand, you can also check your Audit log report. All the activity in your QuickBooks Online account has been recorded in the audit log. Also, you can enable the option on your settings which you can receive an email copy of the invoice or sales transactions you've sent to your customers for easy tracking. Here's how to enable this function: 

1. Go to Gear icon and select Account and Settings. 
2. Select Sales.
3. On Messages section, tick Email me a copy at (your email address).
4. Select Save and Done.
