When you are creating a Quote, you can specify the project name in the Customer field in the top-left corner.

This will apply the project name to the transaction, but the email and address details will be that of the parent customer. 

Each project needs to have a parent customer when created, which in your example, might be a particular builder. This builder might have multiple projects listed against them.

Creating projects and then selecting them in the Customer field will allow you to organise the transactions more easily.
