Yes, there's a way to track the activity on a Quote sent just like Invoices. To start this, I suggest running the Quotes/Estimates by Customer report and customizing it. That way, you'll have the option to add the Sent column.
Here's how:
Click the Reports menu at the left panel.
Choose Quotes by Customer in the search field.
Choose the Customise button.
Click the Change columns link. Then, checkmark the Sent box.
