can i find a copy of a sent estimate i accidentally deleted part of?

You can open the actual estimate, click More and select Audit History. This feature provides a detailed timeline of all the changes made to a specific estimate, invoice or bill. It will show you the original values, modifications, and the date and time of each update along with the user who made the changes. I've added screenshots for your reference:
