In QuickBooks Online (QBO), you can only add the ship date field to invoices, estimates, and sales receipt, matt269.
For sales orders, you can manually add this information in the Note to Customer field. Here's how:
1. Navigate to the +New button.
2. Click Sales Order.
3. Fill out the necessary details.
4. Enter ship date under Note to Customer field.
5. Hit Save and Close.
If you also want to add shipping address to the invoices created from the sales orders, you can customizethe form.

Why? You can add the Ship Date and most other fields to a Sales Order in QuickBooks Desktop - and have been able to since Sales Orders were added to QuickBooks Desktop.
I guess this is just yet another of the hundreds of ways QuickBooks Desktop is far better than QuickBooks Online.
