My finalised pay period dates are out by 1 week for the past 3 weeks. How do I fix this. pay run done today (01/01) is saying paid date 07/01

You can fix this by unlocking the payrun, make the change and finalise it again. Depending on your STP status for said payrun, you might also need to consider creating and lodging an update event so ATO would get notified about the change of dates.
