We have had a number of customers concerned with the receipt document layout. It is confusing as it does not clearly state the balance becomes $0.00 after payment is made

If you'd like your customers to see the transactions as well as balances, you'll need to create a statement by heading to the " + New" button and selecting the "Statement" option. Since it is a receipt, you wont be able to see the balance.
