how do I setup a NON-POSTING account? I can’t find ‘non-posting’ to select.

Once you've created your first Purchase order, QuickBooks will automatically add a non posting account  for you. This helpful guide will provide more information on what types of accounts are in QuickBooks as well as other valuable information that you could benefit from. Scroll down until you see Accounts QuickBooks sets up for you.
