Will mapping for a product/service (to income/expense account) be broken if account name is changed, or is it mapped by account numbers?

Welcome to Community!  Setting default accounts to your products and services is a great way to create your transactions effortlessly. I can understand your concern, when making changes to the associated accounts.  I'd be happy to provide some insight here!

Although QuickBooks automatically sets up your chart of accounts for you, you can tailor it to your specific business needs with the option to edit the account descriptions and/or numbers at any time.  When these changes are made, all transactions will be linked to the account with the new number, or description, as the functionality of the accounts is not affected.
