Can I run a report totalling the product sales by date from date to date to see how many items I sold in that period? How can I do this?

You can run a Sales by Product/Service Detail select custom in the report period field and then enter the relevant date range > run report. You will then see a QTY column with a total at the bottom. 

You can also run a report per product/service; select the cog icon in the top right hand corner of the screen > product and services > select the drop down arrow to the right of edit > run report > select custom in the report period and enter the relevant dates > run report
