How can I run a report that gives my sales invoices paid and the date they were paid?

The payment date is linked to the invoice payment, not the invoice, meaning it isn't possible to customise sales reports to add this. You can, however, run the Invoices and Received Payments report (where the payment will show listed beside the corresponding invoice).
