My recurring invoices and new invoices are counting up from the wrong number (750) when my invoice count is actually at 830. What do I do?

From the Gear Icon, go to Account and Settings, then to Sales.

Make sure your Custom Transaction Numbers is set to ON.

Next time you go to issue an invoice, you should be able to manually adjust your invoice number as you see fit and QB will begin counting from there.
