Hello there, @C-troutman. Currently, the option to remove the VAT entirely is unavailable once it has been turned on.

 

What you can do is set your account to default to out of scope of tax in your company settings, so it stops appearing on your invoices and doesn’t interfere with your accounting. To do this, navigate to Gear > Account and Settings > Advanced. From there, find the Accounting section, click Edit, and change the Default tax rate selection to Out of scope of tax before clicking Save.

 

Regarding your second question, the VAT tax is usually enabled during the initial setup of your company, as QuickBooks will set it up by default based on your business address.
