Do you pay an expense written with a cheque through the expense tab then choose cheque to record cheque payment?

No. If you need to print it out you have to use Cheque. Otherwise the two procedures are interchangeable- the only difference is Expense can be drafted from any current asset account while Cheque can only be from bank type accounts. Do one or the other but not both for same expenditure
