Under MTD 'VAT transactions need to be preserved in a digital form for six years' - If I leave QB will I have access to the software for 6 years without subscription?

After cancelling QuickBooks, you will have access to your data as read-only for a year for no charge. It is then your responsibility to export the data within that year and store it somewhere you can access if HMRC ever request it.
