Can anyone tell me how to change ANOTHER user's email address?

Making sure that all users logins are up to date is an important part of using any software. QuickBooks Online has a way to edit a user's information while they are logged in. I can help you with that.

A user in QuickBooks Online has to change their email themselves while they are logged in. This can be accessed by clicking on the first letter of their first name in the upper right corner, then select Manage Intuit Account. This will give that user access to modify their own information. Another way to access this page is to click on this link that takes you to the Intuit Accounts site. They'll be prompted to log in and they'll be able to modify their own information.
