Hi, I was trying out the QuickBooks “Self-employed” trial but I’m not sure if my data will be saved if I just go back to my regular QuickBooks. Does anyone know?

Every QBSE or QBO account is a seperate account. The data in trial account will be saved similar to the paid account. And keep in mind, if you click the Buy button to open a new QBO/QBSE account , your data in trial account won't be migrated.
