How do I export financial data (not just reports), journal entries, etc to a csv file from Quickbooks Online Essentials?

Yes we are converting to Sage Intaact, Sage says they cannot assist in the export from QBO, only the import to Sage

You can use the exporter tool

Another option, convert your data to QB Desktop file format and use the trial version to access your historical data for good. Then start your Sage account from scratch.
