At this time, we're unable to recover invoice data when QuickBooks Online (QBO) is timed out. I know how beneficial it is when you can do a couple of work at the same time while doing invoicing.
For the time being, I'd recommend updating your account preferences in the Advanced settings to prolong the session of activity in QuickBooks.
Here's how:
Select the Gear icon on the top right and choose Account and settings.
Go to Advanced from the left panel.
Scroll down and then select Other preferences.
In Sign me out if inactive drop-down, choose whether 2 hours or 3 hours.
Hit Save.
I'd also suggest saving your task when you're multi-tasking so all things are being worked splendidly.
Additionally, you can use the Audit log to see transactions that you have deleted unintentionally. From there, you can retrieve them by clicking their transaction name on the Event column.
