I do sale a prepaid package of service hours that can be used by the client, how can I track and show the used hours in the bank of hours sold?

What you're describing isn't currently a feature in the program, but I'll help you explore some options for working out how to record this information.

Using the features available in QuickBooks Online, you can consider using fields such as Description or Message on invoice to make note of how much time has been used of the allotted package or how much time is left over. This'll let both you and the customer keep track of these hours.

Another option is to visit QuickBooks Online's Apps tab, found in the left menu, and to search for third-party applications that may be able to do what you're looking for. To learn more about an app you're looking at, you can reach out to the appropriate support team by choosing from the options in the App information section of the app page.
