Can I categorize customers as I would like to label customers that come to us of via Google as PPC

There is no specific feature for categorising customers in QuickBooks Online.

You can add this information in the Notes section of the customers profile, or add the label in the Customer display name field. This field is for internal use only and will not show on any transactions sent to the customer.
