I want to stop my customers having the option of paying with PayPal

Welcome to the Community page, 

In order for your customers to stop getting the option to pay via paypal,  you would need to go into apps in Quickbooks and turn off the 3rd party app of PayPal. once you have turned this off your customers will no longer see and get the option to pay via PayPal.
