How should I do pay roll with HMRC Using owner equity as Salary?

Hi,

I don't pay myself a regular weekly or monthly Salary.

Because I'm in the retail business I don't earn a predictable wage.

I pay myself under "owner equity" reference to my name as employie.

How should I do pay roll with HMRC?
