Is there an Employee Pay Adjustments History Report in Quickbooks online? I want to look back at employee wage increases over the last 3 years.

QuickBooks Online doesn't have a report which shows the exact info you're looking for. The good thing is that there are many other reports which you can filter through to gather the info you'd like to see. I encourage you to check out the following article:
