Yes, you can definitely still track any rejected transactions in QuickBooks.I can walk you through the steps on how to find those estimates in QuickBooks Online.
Here's how:
Go to the Sales menu and click on the All Sales tab.
Click the Filter menu and choose Estimates.
For the Status, choose Rejected.
Once the filters are applied you'll be able to get the list of all rejected estimates.
