I see a tax column in my list of expenses, but my expenses forms don't give me the option to choose the VAT rate. I am in Spain

I have some ways for you to have an option of changing the VAT rate in your expenses, @worldlywiz. 

If you're referring to the VAT rate column in your expenses window, make sure to select the Exclusive or Inclusive of Tax in the Amount are section. This way, you can choose the VAT rate.
