First, could you please confirm if you are using QuickBooks Online? If that’s the case, hiding the total amount when sending estimates is unavailable. In the meantime, I recommend sending feedback to our Product Engineers. They can review your suggestion and consider adding it to future updates. 

Here's how:

1. Select the Gear icon, then choose Feedback.
2. Type in your product suggestions.
3. Select Next to submit.
