Can I set up and account within my regular checking account so I can see the balance in that account at anytime?

Yes. Set up and use a sub-account under the bank account.

Maybe I am not asking the right question.  What I need is the have a fund that we can alot money for vaccine allowances and we are going to assign $1000 out of our regular checking account into that fund and call it vaccine allowance fund.  Money still stays in the regular checking account.  Then we pay bills (and some of that will need to be taken from that fund) but all of the money will actually come from regular checking, but that portion (the vaccine allowance) needs to be deducted from the vaccine allowance fund, until we have used that fund up?    Is that a sub account?

Yes, I think you can do what you describe with a sub-account.
