Being able to send sales receipts quickly is one of the ways QuickBooks Online helps you save time. Having to enter an email address every time can put a damper on how much time you do save. Allow me to help go over how to get this resolved.
The best way to do this would be to create a customer account for them by going to: Sales>Customer>New Customer. Once you add them as a customer and have an email added to the profile, the email will always populate when that customer is selected.
If saving it from the sales receipt window is an option you want you can also send feedback directly to our development team by going to: Gear>Feedback. This sends your feedback directly to them which could be added in future updates.
