Where on the Dashboard is where I click on VAT to get into the VAT Centre so I can add in our VAT Registration Number so it appears correctly on my new invoices?

Welcome to the Community page, 

You cant edit this on the dashboard page, you will need to click on the tab on the left-hand side that says taxes>VAT>edit vat top right> edit settings>and adjust or change the vat registration number in there> save 

This will then show correctly on your invoices when you send them to your customers.
